Khapli is one of the oldest cultivated wheat varieties in India, also known as Emmer wheat. It's naturally higher in fibre and protein than modern wheat, with a lower gluten content — which is why it has that distinct nutty flavour and is gentler on digestion for many people.
Khapli wheat has a much lower crop yield than modern high-yield wheat varieties, so there's simply less of it grown. We also stone-grind it slowly at low temperatures instead of running it through high-speed roller mills — this protects the nutrients but takes longer and produces less flour per batch. Both add to the cost, but you're paying for the grain itself and the process, not a premium label.
Stone grinding mills the whole grain slowly at low temperatures using traditional chakkis, instead of the high-speed, heat-generating roller mills used industrially. Heat during milling degrades vitamins, healthy fats, and enzymes — stone grinding avoids that, so more of the grain's natural fibre, minerals, and flavour make it into your flour.
Khapli wheat is generally reported to have a lower glycemic index than regular wheat, commonly cited in the range of 35-40 versus 65–70+ for modern wheat, though the exact figure can vary based on grain source and how it's milled and cooked.
